30 HEALTHY EGG RECIPES FOR EASY MORNINGS
Mornings can be rough. But we need a healthy start to the day. So I’ve brought to you today 30 healthy egg recipes that will make your mornings a little easier and a little healthier.
I love eggs. I didn’t always eat them much because my favorite way was scrambled. Seems I managed to screw them up and was afraid to make them again.
Then I discovered a couple things.
One – this awesome microwave egg maker. It is so easy to whip up an individual serving of your favorite egg combo. It’s a dream when feeding my three hungry wolves. Girls, I meant girls.
Two – the egg bake. Easiest, awesomest, most versatile egg recipe I found.
My go-to egg bake recipe consists of a dozen eggs, a splash of milk, a little salt and pepper and the add in options of ham, shredded cheese and frozen spinach.
The add in options are endless. Make it a southwestern style egg bake with peppers and sausage. Throw in more veggies. More meat. Bake it in a 8 x 11 cake pan or as single serve muffins. If there are leftovers, and that’s a big if, they freeze well. I usually make a bunch of egg bake muffins just so I can freeze some.
So how do I make my egg bake. It’s easy.
- Scrambled up a dozen eggs with that splash of milk and salt and pepper.
- Add the thawed chopped spinach and scramble it some more. This is just to break up the spinach some more and disperse it throughout the egg bake.
- Spray cake or muffin pan.
- Line the bottom of the pan with shredded cheese. I usually go for Colby jack or cheddar.
- Pour the egg mixture into the pan.
- Chop up some ham and sprinkle it into the mixture.
- Pop it into the oven and bake at 350 degrees for about 40-50 minutes. Go for 15-20 minutes for muffins. I always keep my eye on it though just in case something wacky happens.
